Cornufé : electric oven
- Preheat oven at 120°C (or 248°F)
- Oil the bowl
- Make a disc of baking paper the size of the bowl, oil it and insert it into the bowl
- Zest the citrus fruits to get the equivalent of a full tablespoon.
- Make the eggs whites:
- Start at low speed with a pinch of salt so that the egg whites are very liquid
- Stir in 1/3 of the sugar at medium speed
- Add 2/3 of the sugar and the zests on low speed until the egg whites are firm but soft
- Put the egg whites into the bowl
- Cook for about 45 min
- Let cool and unmould in a dish. Save in the fridge
- Decorate and serve (caramel can be added when serving)
