La Cornue® Elements Used:
- Château: electric oven
- Cornufé: electric oven
Bowl of about 2 litres
Sunflower or peanut oil
1 teaspoon
Egg whites
60 g
Different organic citrus fruits for the zests (e.g. orange, lemon, lime, pomelos, combava, clementine, mandarin).
at least 2
Zester or microplane
Sheet baking paper
  1. Preheat oven at 120°C (or 248°F)
  2. Oil the bowl
  3. Make a disc of baking paper the size of the bowl, oil it and insert it into the bowl
  4. Zest the citrus fruits to get the equivalent of a full tablespoon.
  5. Make the eggs whites:
    • Start at low speed with a pinch of salt so that the egg whites are very liquid
    • Stir in 1/3 of the sugar at medium speed
    • Add 2/3 of the sugar and the zests on low speed until the egg whites are firm but soft
  6. Put the egg whites into the bowl
  7. Cook for about 45 min
  8. Let cool and unmould in a dish. Save in the fridge
  9. Decorate and serve (caramel can be added when serving)
