Ingredients
green courgette

round yellow courgette

eggplants

yellow pepper

Fresh thyme and rosemary
lemon

olive oil

Directions
  1. On the spit, alternate the vegetables, interspersing them with sprigs of aromatic herbs.
  2. Sprinkle abundantly with lemon juice and olive oil, add salt.
  3. Cook for about 30 minutes on a minimum heat, then increase the heat at the end of the cooking time to obtain a nice colour.
